Quesadillas with Optional Proteins

Grocery List

  • 1 onion
  • 1 tomato
  • 1–2 jalapeños (optional)
  • Fresh coriander (optional)
  • 1 lime (optional, for serving)

  • Flour tortillas (medium or large)
  • Vegetable oil or butter
  • Salsa or hot sauce (optional)

Spices

  • Salt
  • Black pepper
  • Paprika (optional)
  • Cumin (optional)

Proteins (Optional)

  • Cooked shredded chicken
  • Cooked beef (e.g., leftover steak, mince, or barbacoa)
  • Cooked chorizo
  • Refried beans or whole black beans

Other

  • Grated cheese (cheddar, mozzarella, or a Mexican blend)

  • Non-stick frying pan or skillet
  • Spatula

Ingredients (Serves 2–3)

  • 4 flour tortillas
  • 200g grated cheese
  • ½ onion, diced
  • 1 tomato, diced
  • 1 jalapeño, finely chopped (optional)
  • 1 tbsp oil or butter

Optional protein fillings (choose one or mix):

  • 150g cooked chicken, shredded
  • 150g cooked beef or steak strips
  • 100g cooked chorizo
  • 150g refried beans or black beans

Meal Prep Steps

  1. Dice the onion, tomato, and jalapeño.
  2. Grate cheese if not pre-shredded.
  3. Prepare your chosen protein: shred the chicken, slice leftover steak, or warm chorizo/beans.
  4. Lay out all fillings for quick assembly.

Cooking Instructions

  1. Heat the pan over medium heat and add a small amount of oil or butter.
  2. Place one tortilla in the pan.
  3. Layer fillings: Add cheese first, then vegetables, then your chosen protein. Top with more cheese.
  4. Place a second tortilla on top (or fold if using large tortillas).
  5. Cook 2–3 minutes per side until the tortilla is golden and the cheese is melted.
  6. Remove, rest 1 minute, then cut into wedges.
  7. Serve with salsa, lime and fresh coriander if you like.

Storage & Reheating Instructions

  • Fridge: Store cooked quesadillas in an airtight container for up to 2 days.
  • Reheat:
    • Pan: 2–3 minutes each side until crisp.
    • Air fryer: 3–4 minutes at 180°C.
    • Microwave: quick but softens tortilla – 30–45 seconds.
  • Freezing: Freeze assembled (uncooked) quesadillas between parchment sheets. Cook directly from frozen in a pan on low heat.
