Ingredients (Serves 4)

  • 1 whole chicken (1.4–1.8 kg)
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp ground cumin (optional)
  • 1 lemon, halved
  • 3–4 garlic cloves or ½ bulb, smashed
  • Fresh thyme/rosemary (optional)

Meal Prep Steps

  1. Remove giblets from the chicken cavity if present.
  2. Pat the chicken completely dry with kitchen paper—this is key for crisp skin.
  3. Tie the legs together with butcher’s twine (optional but helps even cooking).
  4. Mix all spices in a small bowl.
  5. Rub the chicken with olive oil, then coat evenly with the spice mix.
  6. Stuff the cavity with lemon halves, garlic, and herbs.

Cooking Instructions (Air Fryer)

  1. Preheat your air fryer to 180°C for 3 minutes.
  2. Place the chicken breast-side down in the basket.
  3. Cook for 40 minutes at 180°C.
  4. Carefully flip the chicken breast-side up.
  5. Cook for an additional 20–25 minutes, or until the internal temperature reaches 75°C in the thickest part of the breast/thigh.
  6. Optional glaze: Mix 1 tbsp honey + 1 tsp olive oil and brush over the skin in the final 5 minutes for extra shine.
  7. Rest the chicken for at least 10 minutes before carving.

Storage

  • Fridge: Store carved chicken in airtight containers for up to 3 days.
  • Freezer: Freeze portions for up to 3 months.

Reheating

  • Air fryer: 160°C for 5–7 minutes.
  • Microwave: Reheat covered to retain moisture.
  • Tip: Add a splash of chicken stock when reheating to keep it juicy.
