🌶️ Ground Beef with Potatoes & Mexican Chiles

A spicy, saucy, high-protein meal prep for 3 days.


🛒 Ingredients (for 4 servings – scaled for 3-day meal prep below)

  • 500 g ground beef (10–15% fat)
  • 2 medium potatoes, diced
  • 3 medium tomatoes, chopped
  • 1 medium onion, diced
  • 2 garlic cloves
  • 1 ancho chile
  • 1 guajillo chile
  • 1 chipotle in adobo + 1 tsp adobo sauce
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp smoked paprika
  • 1 bay leaf
  • Salt & pepper
  • 1 tbsp oil

🔥 FULL RECIPE (4 servings)

1. Chile Sauce

  1. Remove stems/seeds from ancho & guajillo.
  2. Toast 10–15 sec each side.
  3. Soak in hot water 10 min.
  4. Blend with:
    • garlic
    • chipotle + adobo
    • cumin, oregano, paprika
    • 1 cup water/stock
    • pinch salt
    • optional 1 tsp vinegar/lime
  5. Strain if you want it smoother.

2. Cook the Dish

  1. Brown beef in oil.
  2. Add onion → cook 3–4 min.
  3. Add garlic → 30 sec.
  4. Add potatoes → cook 5 min.
  5. Add tomatoes → soften 3–5 min.
  6. Add chile sauce + bay leaf.
  7. Simmer 20–25 min until potatoes are tender.
  8. Adjust salt, acidity, or thickness.

🍱 MEAL PREP FOR 3 DAYS

3 meals = 3 servings

Scale the recipe as:

  • Ground beef: 375 g
  • Potatoes: 1.5 medium
  • Tomatoes: 2 medium
  • Onion: ¾ medium
  • Garlic: 1.5 cloves
  • Ancho: ¾ chile
  • Guajillo: ¾ chile
  • Chipotle: ¾ pepper + ¾ tsp adobo
  • Spices reduced proportionally
  • Oil: 0.75 tbsp

Storage

  • Store in 3 airtight containers.
  • Keeps 4–5 days refrigerated.
  • Freezes well up to 2 months.

Reheat

  • Microwave 2–3 minutes with the lid slightly open.
  • Add a splash of water if too thick.
