A spicy, saucy, high-protein meal prep for 3 days.
🛒 Ingredients (for 4 servings – scaled for 3-day meal prep below)
- 500 g ground beef (10–15% fat)
- 2 medium potatoes, diced
- 3 medium tomatoes, chopped
- 1 medium onion, diced
- 2 garlic cloves
- 1 ancho chile
- 1 guajillo chile
- 1 chipotle in adobo + 1 tsp adobo sauce
- 1 tsp cumin
- 1 tsp oregano
- ½ tsp smoked paprika
- 1 bay leaf
- Salt & pepper
- 1 tbsp oil
🔥 FULL RECIPE (4 servings)
1. Chile Sauce
- Remove stems/seeds from ancho & guajillo.
- Toast 10–15 sec each side.
- Soak in hot water 10 min.
- Blend with:
- garlic
- chipotle + adobo
- cumin, oregano, paprika
- 1 cup water/stock
- pinch salt
- optional 1 tsp vinegar/lime
- Strain if you want it smoother.
2. Cook the Dish
- Brown beef in oil.
- Add onion → cook 3–4 min.
- Add garlic → 30 sec.
- Add potatoes → cook 5 min.
- Add tomatoes → soften 3–5 min.
- Add chile sauce + bay leaf.
- Simmer 20–25 min until potatoes are tender.
- Adjust salt, acidity, or thickness.

Scale the recipe as:
- Ground beef: 375 g
- Potatoes: 1.5 medium
- Tomatoes: 2 medium
- Onion: ¾ medium
- Garlic: 1.5 cloves

- Spices reduced proportionally

Storage
- Store in 3 airtight containers.
