Ingredients (Makes 1 loaf)

  • 3 ripe bananas, mashed
  • 200 g plain flour
  • 120 g sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • 80 ml vegetable oil (or 75 g melted butter)
  • 1 tsp vanilla extract

Meal Prep Steps

  1. Line the loaf tin with parchment or lightly grease it.
  2. Mash the bananas until smooth.
  3. Pre-measure dry ingredients to speed up mixing.

Cooking Instructions

Oven Method

  1. Preheat oven to 175°C.
  2. In a bowl, mix mashed bananas, eggs, oil, and vanilla.
  3. In another bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. Fold dry ingredients into wet until just combined—do not overmix.
  5. Pour batter into loaf tin.
  6. Bake for 50–60 minutes, or until a skewer comes out clean.
  7. Cool in the tin for 10 minutes, then transfer to a rack.

Air Fryer Method

  1. Preheat air fryer to 150°C.
  2. Prepare batter as above.
  3. Pour into a small loaf tin that fits the basket.
  4. Air fry for 35–45 minutes. Check after 30 minutes.
  5. Let cool before slicing.

Storage & Reheating Instructions

  • Room temperature: Store wrapped for up to 3 days.
  • Fridge: Keeps 5–7 days in an airtight container.
  • Freeze: Slice and freeze up to 3 months; thaw at room temperature.
  • Reheat: Warm slices in microwave for 10–15 seconds or toast lightly.
