Ingredients (Makes 1 loaf)
- 3 ripe bananas, mashed
- 200 g plain flour
- 120 g sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 2 eggs
- 80 ml vegetable oil (or 75 g melted butter)
- 1 tsp vanilla extract
Meal Prep Steps
- Line the loaf tin with parchment or lightly grease it.
- Mash the bananas until smooth.
- Pre-measure dry ingredients to speed up mixing.
Cooking Instructions
Oven Method
- Preheat oven to 175°C.
- In a bowl, mix mashed bananas, eggs, oil, and vanilla.
- In another bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Fold dry ingredients into wet until just combined—do not overmix.
- Pour batter into loaf tin.
- Bake for 50–60 minutes, or until a skewer comes out clean.
- Cool in the tin for 10 minutes, then transfer to a rack.
Air Fryer Method
- Preheat air fryer to 150°C.
- Prepare batter as above.
- Pour into a small loaf tin that fits the basket.
- Air fry for 35–45 minutes. Check after 30 minutes.
- Let cool before slicing.
Storage & Reheating Instructions
- Room temperature: Store wrapped for up to 3 days.
- Fridge: Keeps 5–7 days in an airtight container.
- Freeze: Slice and freeze up to 3 months; thaw at room temperature.
- Reheat: Warm slices in microwave for 10–15 seconds or toast lightly.
