🛒 Shopping List for Indian-Spiced Air Fryer Meal

Pork Medallions + Masala Potatoes + Spiced Green Beans & Asparagus

Temperature: 190°C (375°F)
Total Time: ~30–35 minutes
1️⃣ Masala Spice Blend (Using Your Ingredients)
Ingredients
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 2 cardamom pods
- 2 whole cloves
- ½ tsp ground turmeric
- 1 tsp ground coriander
- ½ tsp ground cinnamon
- ½–1 tsp hot chilli powder
- 1 tsp garam masala
- 1 tsp salt (adjust to taste)
Instructions
- Toast cumin seeds, coriander seeds, cardamom pods, and cloves in a dry pan for 1–2 minutes until fragrant.
- Transfer to a mortar and pestle and grind into a coarse powder. Remove cardamom shells if you prefer.
- Mix in the turmeric, ground coriander, cinnamon, hot chilli powder, garam masala, and salt.
- Set aside. This is your Masala House Blend.
2️⃣ Prep: Season Each Component
🥔 Masala Potatoes
- 400–500 g potatoes, diced into 2–3 cm cubes
- 1–2 tbsp olive oil
- 1–1.5 tsp masala spice blend
Toss until evenly coated.
🥩 Pork Medallions
- 600–800 g pork tenderloin, sliced into 1.5–2 cm medallions
- 1 tbsp olive oil
- 1 tsp masala spice blend
- (Optional) 1 tsp grated garlic + squeeze of lemon
Mix well and set aside.
🌿 Green Beans & Asparagus
- 300 g green beans, trimmed
- 250 g asparagus, trimmed
- 1 tbsp olive oil
- ½–1 tsp masala spice blend
- Pinch of salt
Toss to coat.
3️⃣ Air Fryer Cooking Steps
🔥 Step A — Cook Potatoes First
- Add potatoes to the air fryer basket.
- Cook at 190°C for 10 minutes, shaking halfway.
🔥 Step B — Add Pork Medallions
- Push potatoes to the sides of the basket.
- Add pork medallions in the centre.
- Cook for 6 minutes, flipping if desired.
🔥 Step C — Add Green Beans & Asparagus
- Add the vegetables around/on top of the pork and potatoes.
- Cook for an additional 6–8 minutes, shaking the veg once.
⏱ Total Cook Times
- Potatoes: 22–24 minutes
- Pork: 12–14 minutes
- Vegetables: 6–8 minutes
4️⃣ Finishing Touches
- Squeeze fresh lemon over everything
- Add fresh coriander if available
- Adjust salt to taste
- (Optional) Add a tiny pinch of sugar to balance heat
5️⃣ Meal Prep Assembly
Divide evenly into 3–4 containers:
- Masala potatoes
- Pork medallions
- Spiced green beans & asparagus
Store 3–4 days in the fridge.
Reheat:
- Microwave: 1:30–2 minutes
- Air fryer: 3–4 minutes at 180°C
