🛒 Shopping List for Indian-Spiced Air Fryer Meal

(Servings: 3–4)


🥩 Protein

  • 1 pork tenderloin (600–800 g)

🥔 Vegetables & Starch

  • 400–500 g potatoes (baby or standard, any variety)
  • 300 g green beans
  • 250 g asparagus
  • 1 lemon (for finishing)

🌿 Spices (Only buy what’s missing)

You already have:

  • Cumin seeds
  • Coriander seeds
  • Turmeric
  • Garam masala
  • Ground coriander
  • Ground cinnamon
  • Hot chilli powder
  • Cardamom pods
  • Whole cloves

Optional if you want to enhance:

  • Fresh coriander (cilantro)
  • Garlic (or garlic paste)

  • Olive oil
  • Salt
  • Black pepper

🇮🇳🔥 Indian-Spiced Air Fryer Meal Prep

Pork Medallions + Masala Potatoes + Spiced Green Beans & Asparagus

Servings: 3–4
Temperature: 190°C (375°F)
Total Time: ~30–35 minutes


1️⃣ Masala Spice Blend (Using Your Ingredients)

Ingredients

  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 cardamom pods
  • 2 whole cloves
  • ½ tsp ground turmeric
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • ½–1 tsp hot chilli powder
  • 1 tsp garam masala
  • 1 tsp salt (adjust to taste)

Instructions

  1. Toast cumin seeds, coriander seeds, cardamom pods, and cloves in a dry pan for 1–2 minutes until fragrant.
  2. Transfer to a mortar and pestle and grind into a coarse powder. Remove cardamom shells if you prefer.
  3. Mix in the turmeric, ground coriander, cinnamon, hot chilli powder, garam masala, and salt.
  4. Set aside. This is your Masala House Blend.

2️⃣ Prep: Season Each Component

🥔 Masala Potatoes

  • 400–500 g potatoes, diced into 2–3 cm cubes
  • 1–2 tbsp olive oil
  • 1–1.5 tsp masala spice blend

Toss until evenly coated.


🥩 Pork Medallions

  • 600–800 g pork tenderloin, sliced into 1.5–2 cm medallions
  • 1 tbsp olive oil
  • 1 tsp masala spice blend
  • (Optional) 1 tsp grated garlic + squeeze of lemon

Mix well and set aside.


🌿 Green Beans & Asparagus

  • 300 g green beans, trimmed
  • 250 g asparagus, trimmed
  • 1 tbsp olive oil
  • ½–1 tsp masala spice blend
  • Pinch of salt

Toss to coat.


3️⃣ Air Fryer Cooking Steps

🔥 Step A — Cook Potatoes First

  1. Add potatoes to the air fryer basket.
  2. Cook at 190°C for 10 minutes, shaking halfway.

🔥 Step B — Add Pork Medallions

  1. Push potatoes to the sides of the basket.
  2. Add pork medallions in the centre.
  3. Cook for 6 minutes, flipping if desired.

🔥 Step C — Add Green Beans & Asparagus

  1. Add the vegetables around/on top of the pork and potatoes.
  2. Cook for an additional 6–8 minutes, shaking the veg once.

⏱ Total Cook Times

  • Potatoes: 22–24 minutes
  • Pork: 12–14 minutes
  • Vegetables: 6–8 minutes

4️⃣ Finishing Touches

  • Squeeze fresh lemon over everything
  • Add fresh coriander if available
  • Adjust salt to taste
  • (Optional) Add a tiny pinch of sugar to balance heat

5️⃣ Meal Prep Assembly

Divide evenly into 3–4 containers:

  • Masala potatoes
  • Pork medallions
  • Spiced green beans & asparagus

Store 3–4 days in the fridge.

Reheat:

  • Microwave: 1:30–2 minutes
  • Air fryer: 3–4 minutes at 180°C
