Ingredients (2 servings)
- 4 eggs
- 4 corn tortillas
- 1 tbsp oil (plus extra for tortillas)
- 1 onion, diced
- 2 garlic cloves, minced
- 2 tomatoes, diced (or 200g canned chopped tomatoes)
- 1 jalapeño, finely chopped
- ½ tsp paprika
- ½ tsp cumin
- ½ tsp dried oregano
- Salt & pepper to taste
- Optional: coriander, lime, cheese, avocado
Meal Prep Steps
- Dice the onion, tomatoes, and jalapeño.
- Mince the garlic.
- Warm tortillas by lightly frying or toasting them and keep warm.
- Crack eggs into a bowl if you want to fry them quickly later.
Cooking Instructions
Make the Ranchero Sauce
- Heat 1 tbsp oil in a saucepan on medium heat.
- Add onion and cook 3–4 minutes until softened.
- Add garlic and jalapeño; cook 1 minute.
- Stir in tomatoes, paprika, cumin, and oregano.
- Season with salt and pepper.
- Simmer 8–10 minutes until thickened. Adjust seasoning.
Cook the Eggs
- Heat a lightly oiled frying pan over medium heat.
- Crack in the eggs and fry until whites are set but yolks are still runny (or to preferred doneness).
- Season with a pinch of salt and pepper.
Assemble
- Place warm tortillas on plates.
- Spoon ranchero sauce over each.
- Top with a fried egg.
- Add coriander, cheese, lime, or avocado if desired.
Storage & Reheating Instructions
- Sauce: Store in an airtight container in the fridge for up to 3 days. Reheat in a pan over low heat.
- Eggs: Best cooked fresh; avoid storing.
- Tortillas: Keep wrapped and warm just before serving; can be reheated in a dry pan or microwave.
